Proof Pizzeria Crafts Artisan Pizza Pies in Princeton

The pizza in Princeton now combines two extra ingredients you won’t find anywhere else: art and science. Proof is a pizzeria now open and ready to serve tasty pies using local, seasonal, fresh veggies and herbs. From New York-style pizza to farmstead-inspired vegan pies, Proof’s menu is equal parts by the numbers and unique.

Proof is just steps from Princeton University. Prior to opening, the building (2,130-square feet) underwent significant interior renovations. For instance, look in the front window and you’ll see shelves spotlighting pizza pies. “We wanted to provide a great space for good food that looks enticing from the street,” says Eben Copple; the director of hospitality for Genesis Hospitality, the group that owns Proof. “The décor is rustic chic with a clean, contemporary, bright feel,” Copple adds.

The space seats 14 indoors at full capacity as well as 12 outdoors on the front sidewalk.

The Proof is in the Pizza

“We offer chef driven NY-style pizza with seasonally rotating menus,” Copple explains. “We really capitalize on fresh local vegetables and ones in their peak season to maximize taste and texture.”

Signature menu choices include “The Brooklyn” pizza, which features a square thin crust, garlicky sauce, fresh mozzarella, and fresh basil. The Truffle Pie is also a hit, with its roasted wild mushrooms and French cheese. Then there’s the “Autostrada” pie, a take on a classic Italian road sandwich transformed into a pizza. “We offer something unique to Princeton,” Copple says. “The PROOF really is in the pizza!” Click here to see the menu.

Of course, they have non-pizza options like salads and veggies that change seasonally as well. For instance, the popular Delicata Squash Rings come with a miso aioli and cranberry relish. They also make handmade orecchiette, which is unique because “the process is time-consuming and not what you would expect to see in a pizza restaurant,” Copple believes.

But don’t even think about leaving without trying a dessert pizza. Proof offers an individual dessert pizza topped with sweet ricotta, seasonal fruit, marshmallows, and Nutella. Likewise, their zeppole – fried dough with a maple-cinnamon glaze – is hard to resist.
