LesbiVeggies Promotes Inclusivity & Healthy Eating in Audubon

Growing up, 23-year-old Brennah Lambert didn’t care what she ate, and neither did her family. So when the Lindenwold native had stomach issues in high school, it took a change in diet to make her feel better. Those plant-based meals are part of the inspiration behind her new restaurant, LesbiVeggies.

Before opening her own eatery, Lambert started off cooking for friends and family. Three years ago, she expanded this into a full fledged vegan meal-prep business. That success then led to her fulfilling a dream of opening a brick-and-mortar café, LesbiVeggies in Audubon. “I feel like I’ve done a 360 from cooking in my grandmom’s kitchen,” Lambert says. “Now people are lined up to eat my food.”

The 1,200-square foot café’s ambiance was well-planned. “It’s important to me to have a space where people can get comfortable and enjoy themselves,” Lambert says. The walls display artwork by Black artists and a quote by singer Lauryn Hill. You’ll also find gender-neutral bathrooms at LesbiVeggies. The spot seats 23 guests at full capacity, but Lambert plans to have a couple outdoor tables during warmer weather.

Humble Roots

Lambert doesn’t have a culinary background, though she does hold a business degree from Rutgers University-Camden. “Food and flavors just come to me,” she says. “I know what tastes good.” She uses this talent to craft vegan dishes that taste good, including classic favorites with a vegan twist.

In fact, Lambert says that most LesbiVeggies patrons aren’t even vegans. “They don’t feel weighed down or nasty after they eat it. They’re refreshed, satisfied, and want more afterwards. People are pleasantly surprised.”

The LesbiVeggies Menu

So far, Brunch has been a big hit. In particular, the blackened Cajun cauliflower sandwich is a fan favorite. Likewise, the Peach cobbler pancakes are a hit among kids and adults alike. Breakfast tostadas are also a must-try, with refried beans, chickpea scramble, mozzarella, pico, sour cream, lettuce, avocado, and scallions.

Meanwhile, Lambert says folks love the chipotle lime cauliflower wings for dinner. In addition, the trendy birria tacos are popular during dinner. Her favorite item on the menu, however, is eggplant Parmesan. “It’s my bread and butter,” she says. “I really like that a lot and enjoy making it.”

About The Owner

As a Black, queer woman, Lambert strives to promote inclusivity and an open and accepting environment at her café. The name LesbiVeggies, in fact, aims to make people feel included and alert guests to her identity.

Equally important is her mission to encourage the Black community to eat plant-based foods. She believes owning this business is a stepping stone for her community that will inspire them to try vegan foods.

At 23, Lambert is ambitious and full of goals. For instance, she thinks Philadelphia and Asbury Park would be perfect fits for LesbieVeggies franchise locations.
