Jayce Baudry French Pastry Bakes Elegant Desserts in Montclair

Traveling abroad is no longer the only way to enjoy European pastries in New Jersey. Montclair is now home to Jayce Baudry French Pastry, a patisserie specializing in french sweets, elegant desserts, and custom cakes. They offer nationwide delivery (on select items), local delivery, and in-store pickup as well.

Jayce Baudry French Pastry is within the Claridge Cinema’s newly renovated lobby, but goes beyond a typical bakery. The shop creates upscale individual pastries, specialty tarts and cakes, macarons, eclairs, and more. “These are high-end pastries with a little twist between a traditional and modern pastry,” Owner Jayce Baudry says. In fact, the menu recreates classic French desserts found at cafes and pastry shops in Paris; as well as coffee, espresso drinks, teas, and artisanal ice creams to pair with any pastries.

Originally from Bordeaux, France, Jayce was 14 when he apprenticed in his hometown. Since then, he’s worked as a pastry chef in some of the most renowned establishments in France’s Lyon and Paris. He then moved to New York City in 2013, working alongside the famous Daniel Boulud. (A French chef and restaurateur who owns over a dozen restaurants internationally.)

Jayce then moved to Jersey City to begin working for friends Olivier Muller and Dominque Paulin at Faubourg. (A French restaurant also in Montclair.) After falling in love with Montclair and its community, he decided to open Jayce Baudry French Pastry. “In Montclair, people are interested in good food,” he says.

(Almost) Too Pretty To Eat

At Jayce Baudry French Pastry, they make all desserts using fine ingredients. “We definitely have a high target aesthetic wise and flavor wise,” Jayce explains. In particular, he uses two or three flavors at maximum, per dessert. “You can recognize the flavors,” he says. He believes fine ingredients are to be respected; or in his words, “Make them shine and not just blend them with a lot of different items.”

One popular item is the cannelé de Bordeaux. This small, traditional pastry is a specialty of Bordeaux, France (Jayce’s hometown). The cannelé is a custard-like pastry with a caramelized crust. Its flavors include fresh vanilla beans and a hint of rum. However, Jayce’s personal favorite is the chocolate salted caramel cake; with Valrhona dark chocolate mousse, salted caramel crémeux, and a chocolate devil’s food cake biscuit. “It has the richness of chocolate and the sweetness of the caramel crémeux,” he says.
