After taking up bread baking during the COVID-19 pandemic – like many others – Joyce Hetherington found a creative outlet. Joyce, aka Lady J, soon turned her passion into a business. Now, Kneaded by Lady J in Brielle offers breads and sweets, plus catering services.
Kneaded by Lady J is “modern shabby chic with a very laidback vibe and great creative energy,” Joyce says. The 1,400-square-foot bakery specializes in sourdough, ancient wheats, challah, pretzels, bagels, and rye. Joyce loves to make food look beautiful, whether it’s for personal events or corporate catering.

Breads, Sweets, & More
In addition to breads, Kneaded by Lady J is popular for their cheese and charcuterie platters, called grazing platters. These platters are packed with any combination of meats, cheese, nuts, crackers, dips, fruits, and sweet treats. Platters can even have a specific theme, such as The Sopranos or The Kentucky Derby. But no matter the theme or design, every platter is unique.
Kneaded by Lady J also handles catering requests. Joyce can create anything from breakfast spreads to dinner spreads. They make as much as possible in-house, from the breads to their hummus and dips. In fact, they source their stone ground flour from a local small mill.
When it comes to catering, Joyce loves working with clients to bring their culinary vision to life.
“There are so many components to bring an event to life, which can be challenging; but the feeling of accomplishment at the end of each one is very satisfying,” she says.
About Kneaded by Lady J
Those that want to build their own platter can visit the onsite baking studio. Kneaded by Lady J can also come travel for offsite event hosting. Participants can create their own designs while enjoying hors d’oeuvres or sipping wine. They also host ladies nights out, date nights, birthdays, teambuilding, holidays parties, and kids’ parties.
Joyce is a mother of two boys, and attended the School of Visual Arts as a food photo major. “As an artist, I’ve experienced all mediums and food is by far my favorite medium,” she says. Her mother was an artist and chef and owner of a catering facility in New York. “I’m really creative and love a good challenge. I believe food should be wholesome, tasty, and beautiful.”
