The name Rare Bird is inspired by the Latin phrase “Rara Avis,” something extraordinary, unique, and seldom seen. In modern slang, it often refers to a child prodigy or a person of exceptional talent. It is also the motto of Ramsey Country Club, making Rare Bird the perfect name for the club’s new restaurant.

Rare Bird is a one-of-a-kind restaurant experience that blends an Italian steakhouse with artisan sushi. The relaxed-yet-upscale atmosphere inspires both exceptional cuisine and meaningful connection. The menu appeals to a range of tastes, combining multiple culinary styles to offer a refined-meets-approachable experience.

“My menu philosophy is rooted in respect for both tradition and innovation,” says Michelin-starred Executive Chef Joey Sergentakis. “From a perfectly grilled ribeye to delicate nigiri, every dish is prepared with precision, artistry, and passion. Guests experience the familiar comforts of an Italian steakhouse elevated with fresh perspectives.”

Signature Rare Bird dishes include the surf and turf roll, cavatelli bolognese, the Rare Bird burger, and the grilled Ribeye. The latter is an early fan favorite for its flavor and execution. Other menu must-haves range from baked littleneck clams and lemon garlic shrimp to bucatini pesto and slow-roasted pork chop.

As for drinks, Rare Bird boasts over 10 rotating craft beers on tap and seasonal craft cocktails. They also serve an extensive selection of bottled and canned beer, and curate an expansive global wine list.

“Rare Bird is about more than just incredible food—it’s about creating an atmosphere where every guest feels like they belong,” says Daniel Grey, food and beverage consultant. “We’re building a place where people come to celebrate, connect, and be inspired by the culinary experience.”

Rare Bird is a joint project by Daniel Grey and Chef Joey. They’re joined by Michael Treible, General Manager of Ramsey Golf & Country Club, who brings nearly two decades of service and leadership. Brian Fazekas serves as restaurant manager and brings a long career managing fine-dining establishments.

The restaurant can seat 140 guests indoors, blending modern design with warm textures, refined lighting, and comfortable seating. This unique environment is well-suited for a night out, family dinner, or celebratory gathering. Outdoors, a 1,030-square foot outdoor terrace off the bar overlooks the golf course and lake.

Future plans include expanding their seasonal menu offerings, hosting curated culinary events and wine dinners, and increasing live entertainment programming.
