Jersey’s Best Omakase FAQs
Omakase is a traditional Japanese dining style. Instead of ordering from a menu, guests trust the master chef to curate a multi-course tasting. The chef selects the freshest seasonal fish and ingredients available that day, often preparing and serving each piece of sushi directly to the guest one at a time.
Yes! Standout BYOB omakase spots include Shumi (Leonia/Ridgewood), Umai Omakase (Verona), Naoki Sushi (Lawrence Township), and Hadaka (Asbury Park). Bringing your own premium sake or favorite wine is a great way to elevate the meal.
Reservations are heavily recommended and often strictly required. Intimate spots like ICHIRYU (West Caldwell) and Naoki Sushi only seat 6 to 8 people per service. For exclusive spots like the referral-only Sushi by Sea (Ridgefield) or the premium service at Sushi Aoki (Fort Lee), booking weeks in advance is standard practice.
Traditional omakase focuses on classic Japanese techniques, highlighting the purity of the fish, the temperature of the rice, and standard accompaniments like fresh wasabi and soy sauce. A modern or fusion omakase often incorporates global flavors or luxury ingredients like wagyu, truffles, and caviar to reimagine the experience.
