Wood Stack in Metuchen Offers Mobile Pizza Kitchen & More

There’s no shortage of pizza places and Italian restaurants in NJ. But the Wood Stack Pizza Kitchen in Metuchen (their second location after Pine Brook), offers something you don’t find often; in addition to their traditional dine-in restaurant, they can bring a mobile pizza kitchen to your next pizza party.

Wood Stack Pizza Kitchen uses quality ingredients that are locally grown and sustainable when possible. They make pizza dough and bread with natural sourdough starter and no commercial yeast in their 100% scratch kitchen; in fact, both are fermented slowly for 24 to 48 hours. Meanwhile, all that cooking gives the restaurant an amazing smell of wood burning and fresh bread.

What Makes Wood Stack Different

Wood Stack is about 5,500 square feet across two stories, and seats around 210 including an outdoor patio. The owners say the large restaurant is meant to be as comfortable as a warm sweater and your favorite jeans.

Those owners, Charlie and Joey Badalamenti, know their way around an Italian kitchen. Specifically, they have 30-plus years of experience in the restaurant space. They currently own a successful pizzeria in Union, Glendale Pizza, which their late father started in 1987. They also own the Pine Brook location of Wood Stack (open since 2014).

With the success of the first spot, they recently brought Wood Stack to Metuchen. However, the duo already owned a restaurant in town named Novita Bistro & Lounge. But instead of double dipping, they took a different approach; “Once our first Wood Stack in Pine Brook was successful, we knew we wanted to transform Novita’s fine dining concept into Wood Stack’s more casual concept in Metuchen,” Joey explains.

You Were Expecting Something Other Than Pizza and Pasta?

When it comes to the menu, Joey says to start your meal off with some meatballs; they make them with ricotta salata, pangrattato, tomato sauce, polenta, and pesto. Then order some Crispy Brussels Sprouts or the stracciatella capresv; the latter is soft-stretched cheese, tomato soffritto, sea salt, and extra virgin olive oil served with country bread.

Of course, pizza is the star of the show at Wood Stack. They make all of their pies in two Stefano Ferraro ovens from Naples, Italy. These unique ovens reach 900 degrees F, producing an artisanal and slightly charred pizza in just under two minutes.

You’ll find unexpected pizzas such as the Popeyev, Tartufov, and Burratav pies. Though these pizzas may be hard to pronounce, one look at their ingredients should delight the senses. You can click here to see the full menu.

If you’re not in the mood for pizza, it’s worth noting that the pastas are all homemade. The Pappardelle Bolognese is a fan favorite, but Badalmenti’s choice is the Bucatini All’ Amatriciana.

Wood Stack also has a wide array of drink options, including cocktails, spritzers, wine, beers, and more.

A New Way To Take Your Pizza To-Go

The mobile pizza kitchen is a unique service Wood Stack provides out of their Pine Brook location. When you book a pizza party, they provide the forks, knives, plates, and napkins; as well as a special menu you select in advance. You can choose three styles of pizza, with an additional charge (per person) for salads, drinks, and dessert.
