The team behind the new Seoul Fried Chicken Co. in Edison wants to do more than just serve quality food. They want to be good neighbors, respecting the community and the planet. They also want to hear genuine feedback from customers about how they can improve. Finally, they want to value their customers and employees.
Seoul Fried Chicken Co. is an 800-square foot Korean fast casual restaurant focusing on quality, locally sourced ingredients. The interior boasts high ceilings and a clean layout. “We touched it up to make it more Asian,” says co-owner Ray Park. The primary colors throughout are orange, navy, yellow, and beige. “Once you get into the store, you see how those four colors make a nice combination,” Park says.

Inside, the restaurant seats 30, mostly utilizing two communal tables that seat 12 guests each. Meanwhile, they are planning on having outdoor sidewalk this summer for up to an additional 12 guests.
Korean Fried Chicken Done Different
The way Seoul Fried Chicken Co. cooks their food is unlike most other places. “Most Korean chicken is fried in advance and then refried when you order it,” Park explains. Another key aspect is to frequently change the cooking oil to maintain freshness. “We batter and fry it once we get the order. It’s all fresh and the chicken can hold the juice more.”
You’ll find nine kinds of sauces, all made from scratch, at Seoul Fried Chicken Co. In addition, Park says they plan to develop one or two sauces each season. His current favorite is the honey-garlic butter variety, which offers a sweet and spicy flavor. He says the creamy pepper sauce is tasty, as well.
About The Owners
Park has a strong restaurant background; he also owns Red Poke, a healthy Korean fast casual restaurant with two locations in New York City. The NYC-based Japanese, Pado, is also his. Likewise, co-owner Han Song Kim owns Handsome Rice, a Korean spot in NYC. Kim has a degree from Johnson & Wales University, known for its culinary arts programs. Finally, co-owner Ed Wong is CEO of a company that makes takeout containers. “We were all always talking about how we wanted to go into business together,” Park says. “And here we are now.”
If all goes well, the team plans to open a second Seoul Fried Chicken Co. by the end of the year, around the Princeton area. “We want to move fast, but not too fast,” Park states.
