Ben and Katie Sanford – owners of BORO Market | Restaurant | Bar in Pennington – have a clear vision for their eatery. They want a place for date night as well as family dinners, with good ambiance & great food.
Inside the 2,000-square foot spot you’ll find “a Parisian modern design,” according to Ben; who also owns CAFÉ seventy-two in Ewing. “It has a romantic, hip aspect” with a city-feel, he adds, talking about the candlelit tables and fresh flowers. BORO Restaurant sits 90 guests inside at full capacity; meanwhile, their French doors open during warmer weather to a cozy outdoor patio for dining.

BORO Restaurant
The menu at BORO Restaurant boasts modern, New American fare. “We use the highest quality ingredients available and prepare them to perfection,” says Ben. “Nothing is too crazy or fancy. Presentation is straightforward and picturesque, simple but refined. You can enjoy a quick bite at the bar, multi course meals in the dining room, or place an order for take out online or over the phone.”
In particular, you can start with their gluten-free goat cheese croquettes. “We feature and offer a sufficient amount of vegan, vegetarian, and gluten-free dishes,” Ben mentions. Meanwhile, main course favorites at BORO Restaurant include the Berkshire pork chop and the Norwegian cod. (Ben’s favorite, however, is the rib eye steak). BORO Bar
You’ll find a four-tap draft selection at BORO Restaurant | Bar. The oatmeal stout from Vault Brewing in nearby Yardley, Pennsylvania, is one to try. Otherwise, wine lovers are also in luck. “You’ll find unique wines to choose from that you’re not going to see other places,” Ben says. Then there are the cocktails, such as the Suntory; which is Japanese whisky with matcha syrup and a frothy egg-white brulee. Current cocktail favorites also include the Locals Only with absinthe and Bloodhound with blood orange and sage.
BORO Market
As for the market aspect of the name, BORO Market has been open for 11 years. It is part of the same building, but has a separate entrance from BORO Restaurant | Bar. BORO Market sells light and casual fare including sandwiches, salads, pizza, and fresh pastas. Seats for dining are available at their wine & espresso bar and bistro tables, as well as outside. The catering menu offers a signature dressed antipasto platter, in addition to appetizers, pastas, main courses and more.
