Wonton Guy Brings Hong Kong Noodles to Edison

The journey to opening Wonton Guy in Edison was far from easy. Owner Gary Yu first had to convince to building’s landlord that his business was unique. (The landlord refused to accept any businesses similar to something already open in town.) But after pitching his business plan for a restaurant dedicated to Hong Kong wonton noodles, Gary got the space.

The 1,000-square foot Wonton Guy can seat 20 diners inside. It’s interior features wallpaper that depicts a Hong Kong street at night. The restaurant specializes in wontons, of course, but their Hong Kong style is what makes them unique. “People who’ve never had this type of noodle before are surprised by the jumbo size of the wontons,” Gary says. As both owner and chef, Gary makes the wontons himself daily.

What’s on the Menu

Wonton Guy serves three different menu options. The first is a familiar dish of wontons in soup. They also offer both wontons and noodles in soup, or just noodles with soup on the side (lo mein). The wontons here can be ordered with up to three toppings including beef brisket, dumplings, fish balls, or sliced beef. At the moment, the shrimp wonton and beef brisket options are most popular. They also serve vegetable lo mein, fried fish skin, and steamed vegetables as appetizers. Future plans include offering even more appetizers.

Gary even serves an Asian twist on spaghetti and tomato sauce, which is his shredded pork with chili tomato sauce. In fact, every table has a bottle of Gary’s homemade, surprisingly spicy chili sauce. “Some customers ask for water or soup after they put it on since they don’t realize it’s hot,” he says. “They underestimate its spiciness because of the chili oil.”

About the Owner

Prior to moving to New Jersey, Gary spent several years living in Toronto and running a wonton restaurant. His experience cooking wontons comes from other family members in Hong Kong and Toronto; who have been making them at their well-known noodle shop in Hong Kong and Toronto for generations. Before that, he lived in Brooklyn. While deciding whether or not to return to America, a friend suggested opening a restaurant in Edison. He mentioned the town reminds him of Toronto and boasted a high Asian population.
