The new Three Thirds Café in Jersey City combines Brooklyn coffee culture with west coast surf shack vibes. It brings together indulgences like coffee, 90s vinyl, and fresh-baked waffles in a laid back atmosphere. Guests can also expect pastries, signature drinks, and service with a smile.
The 400-square foot Three Thirds Café is within the ground floor retail space of 3 Acres; a new apartment building in Jersey City. “Our inside décor is modern and cozy with a 90s vibe,” says Alexa Sabato, manager of Three Thirds Café. The cafe is owned by Dean Geibel and his son, J.B. Geibel. Meanwhile, Stacie Joonoos is the general manager and Abel Ruiz is the executive chef; Abel’s son, Jonathan, is head barista/manager.

A Whole Menu of Favorites
Three Thirds Café is pet-friendly and can seat 15 to 20 guests. The interior sports a vinyl record player and sofas where guests can relax with their coffee. In addition, their seasonal outdoor patio can seat 10 to 15 more patrons on couches and chairs.
The cafe sources their baked goods – including croissants, muffins, scones, and Danishes – from Balthazar Bakery in Englewood. For breakfast, they offer a made-to-order Belgian waffle; with a choice between strawberries and maple syrup or house-made caramel syrup and bananas on top. Three Thirds Café also serves breakfast sandwiches and wraps (which change daily), yogurt parfaits, and omelets. Likewise, lunch offerings include sandwiches, wraps, and salads. In particular, Alexa recommends the turkey wrap with avocado.

The Drinks at Three Thirds Café
Patrons can expect to find tea as well as coffee drinks like lattes, Americanos, cappuccinos, espresso, and cold brews. Their assortment of flavor syrups includes hazelnut, toffee, and French vanilla. Their beans come from Modcup Coffee Roasters in Jersey City.
At the moment, their CBD coffee and iced matcha with a few pumps of lavender are popular picks. However, Alexa’s personal favorites are the caramel frappe and iced caramel latte with almond milk. They also plan to rotate seasonal specialty drinks like frappes in the summertime. “We hope to accommodate everyone, no matter how crazy the coffee order can be,” Alexa says. “We want our customers to feel that they are at home at Three Thirds; and that our staff is taking care of them in the best way.”
