The ghost kitchen concept continues to grow in popularity in New Jersey. One of the latest “restaurants” to work out of a commercial kitchen is On A Roll in Union City. The business specializes in an assortment of sandwiches available for pick up and delivery.
On a Roll operates out of a 300-square-foot space, offering an array of foods on freshly baked rolls. For instance, their signature dish is a roast beef sandwich. These specialty sandwiches are made with certified Angus beef, and pair great with melted cheese and sauteed onions. On a Roll also covers each roast beef sandwich in a homemade gravy made using a family recipe.

Classic American Favorites
One popular option is The Bruzzer. This roast beef sandwich is a one-third pound Pat LaFrieda burger patty with gravy, cheese sauce, and sauteed onions.
Besides roast beef sandwiches, On a Roll serves hamburgers, cheeseburgers, turkey burgers, grilled chicken sandwiches, and breakfast rolls. The all day breakfast roll is a bacon, egg, and cheese sandwich. They prepare all options on freshly baked Kaiser rolls.
But Laura Nigals Rivera, owner/manager of operations, says her favorite item is actually a side dish. She loves the cream corn batter, golden fried corn fritters which come by the dozen. “They’re something everyone must try once in their life,” she says.
About On a Roll
On a Roll is owned and operated by Robert Bertolli, his daughter Laura, and her husband Christian. Laura has over eight years of experience working in the hospitality business, managing many restaurants throughout Northern Jersey. Christian loves cooking, either at home or in industrial kitchens.
This is the restaurant’s first expansion into New Jersey. Their original local is in Staten Island. But they’re looking to open another location in central or southern New Jersey in early 2025.
Customers can take advantage of their loyalty program, to earn rewards towards future orders. They also offer catering services.
