The owner and chef at Mumbai Maskaa, Simpson Rodrigues, quickly gets philosophical when describing his menu. “It’s a love letter to Mumbai city,” he says of the restaurant, which serves an Indian fusion menu. Specifically, the menu includes both traditional dishes as well as ones with Thai or Chinese flavors.
These fusion dishes are meant to represent how food proprietors bring their own unique flavors to the streets of Mumbai. Every dish, from street food classics to the more contemporary creations, is a journey through Mumbai’s diverse culinary landscape.

Classic Dishes Meet Modern Flavors
The 1,200-square foot Mumbai Maskaa can seat 22 guests indoors, and another 10 on the sidewalk during the summer. “We have a casual, relaxed, Mumbai vibe,” Simpson says about the restaurant and its colorful décor. Though he lives in nearby Clifton, he believes Montclair is the ideal spot for his eatery. “I am a foodie and used to come to Montclair for food,” he recalls.
Simpson says the traditional vada pav is one of his favorite dishes. To make it, the chef coats potatoes in chickpea flour, then fries and serves it with green and garlic sauces. The dish is spread over bread and topped with onions and cilantro. Other fan favorites at Mumbai Maskaa include chicken tikka masala street style, chaat, and the chicken tikka bow bun. But be sure to save room for their orange ice cream dessert.

About the Business
Mumbai Maskaa’s recipes require traditional Indian cooking techniques. The restaurant sources spices and other ingredients from Mumbai, especially because many spices are not found in the United States. These spices help create the authentic flavors of Mumbai that diners can’t find anywhere else nearby.
Simpson has a degree in culinary studies from a University in Mumbai. It has always been his dream to own a restaurant. Prior to their closure, he first opened Biryani Express in both North Carolina and New Jersey. But he now focuses his efforts exclusively on operating Mumbai Maskaa.
