Maize Cocina & Cocktails Offers Mexican Fusion in Westfield

The word “maize” means corn in Spanish. So it’s no surprise that the menu at Maize Cocina & Cocktails in Westfield celebrates corn. From heirloom corn varieties to globally inspired corn-based dishes, ingredients are sourced from nearby farms. Their Mexican Fusion menu showcases dishes that combine traditional cuisine with diverse, worldly influences.

“I have a love for Mexican food and tequila,” says Executive Chef and Maize Co-Owner Jesa Henneberry. “Fusion food is where my creativity thrives. I like to play with food in an eclectic way. It’s fun to combine classic flavors and unexpected combinations to create unique interpretations and heighten each dish.”

Mexican Fusion Favorites

Popular main dishes at Maize Cocina & Cocktails include their Chilaquiles French Onion soup and Octopus al Pastor. They serve the latter with pineapple purée and achiote-roasted plantains. They will soon introduce a Mexican Bar Pie as well. This pizza features a masa crust, seasonal pan-charred vegetables, and queso Oaxaca.

Meanwhile, seafood fans will love the Bloody Maria Shrimp Cocktail with a sleeve of saltines.Then there’s the Black Garlic Mochiko Taco, which comes with hot honey salsa macha, pickled pepper, radish, cucumber, and avocado. For meat lovers, the Bavette steak comes with poblano butter, masa fries, and chimichurri rojo.

Restaurant Exterior

Maize Cocina & Cocktails will soon serve Saturday and Sunday brunch. The menu will include savory and sweet dishes including steak and eggs with poblano butter and a fried egg. Patrons can also look forward to items like the Concha Cristo – a play on the Monte Cristo – and Concha Banana Bread Pudding. Jesa is also looking forward to serving Torrijas, Mexican hot-chocolate-battered challah bread French toast with mezcal caramel sauce. Brunch bar offerings include Carajillo coffee cocktails, Purple Corn Sangria, and Bloody Marias, in addition to mocktails.

About the Restaurant

Ownership worked with the Westfield Historic Preservation Society to transform the space into a restaurant.The team took their time to restore and highlight details such as old wood paneling over a 2.5-year renovation.

Jesa hails from Wisconsin and has worked as a New York City culinary consultant and private chef for 14 years. She was the creative culinary consulting chef behind New York City’s plant-based Mexican restaurant, Jajaja. Then she opened Heritage Grand Bakery on Bryant Park in NYC, in addition to several startup and concept launches. She is also a winner of Food Network’s Chopped.
