Louie’s By Chef Jason Redefines American Cuisine

Chef Jason Dilts brings his culinary talents to Louie’s by Chef Jason in Robbinsville. The American restaurant offers innovative twists on traditional dishes as well as a few new ideas. The spot is also noteworthy because it marks Chef Jason’s return to his hometown to open a new eatery.

Louie’s by Chef Jason is a 2,500-square foot space named for co-owner Dominic “Louie” Maglione. “You’ll find the inside to be a warm, gently, dimly lit atmosphere,” says Co-Owner and Chef Jason. The restaurant seats 85 diners indoors, with outdoor dining available during warmer months as well.

New Age Cooking

Chef Jason describes the menu as “redefined American cuisine crafted using only the freshest and the highest-quality ingredients available”. They source ingredients locally whenever possible, which includes their oysters and Jersey potatoes. Menu highlights include the Cape May oysters and local brussels sprouts with pork belly and cherry pepper jam.

Meanwhile, signature dishes include Dominic’s favorite Boom Boom chicken (vodka chicken parm with rigatoni). He’s also a fan of the short rib mac n cheese. Likewise, Jason’s favorite meal is The Steak Don, named after his grandfather. This 16-ounce New York strip steak comes with mushrooms, red wine cream, local potato puree, and seasonal vegetables.

Takeout options include their full lunch and dinner menu as well as family packages designed for four or more. For example, The Little Italy daily takeout special includes roasted garlic bread, Caesar salad, chicken parm, vodka rigatoni, and tiramisu. They also offer holiday takeout specials like the five-course Date Night Package for two on Valentine’s Day.

About the Owners

Chef Jason, 29, hails from Robbinsville. He has been cooking at restaurants since he was 14, spending years working at fine-dining spots throughout Mercer County. His previous experience includes working as head chef at Zinna’s Bistro in Cranbury and The Revere Restaurant in Ewing. He also spent time at Lola in Robbinsville and previously owned his own restaurant – Chef Jason @ 1275 – in Cranbury.

Dominic Maglione, 22, comes from a restaurant family. His earliest experience comes from working at Fedelo’s in Lawrenceville, which is his father’s pizzeria. “It wasn’t long until Dominic went from hanging out to making pizzas,” Jason says. Maglione eventually took over management and restaurant operations from his father.
