Today, Nino Conigilio is known as the king of pies. A 10-time world pizza champion, he is known for his pizza acrobatics (like circus tricks with pizza). He won his first championship in 2005 in Italy, then won an all-pizza episode of the Food Network’s Chopped.
Nino has multiple pizzeria locations in New York City and Brooklyn. But his pride and joy is Coniglio’s Old Fashioned in Morristown. Now, he’s taking the Coniglio’s name to the Jersey Shore with Coniglio’s King of Pies in Asbury Park. His latest pizzeria can accommodate 25 to 40 guests seated/standing indoors, alongside outdoor dining at picnic tables.

An Oven Fit For a King
Coniglio’s King of Pies features a state-of-the-art Empire oven. As with his other pizzerias, Nino takes a traditional approach to pizza making and exclusively uses fresh, quality ingredients. In particular, pies are made with Coniglio’s 10% sourdough pizza dough and imported Italian ingredients. “We’re using high-quality ingredients that outpace our competitors,” says Nino. “We use in-house sourdough starters and clean ingredients. We pride ourselves on that.”
The Upside Down Sicilian pies are fan favorites, says Nino. They’re topped with mozzarella, tomato sauce, basil, and pecorino. Similarly, Uncle Carlo’s Onion Pie is a popular square pie with mozzarella and sweet onion. Nino recommends trying the Josephine’s Grandma with mozzarella, tomato sauce, basil, and Parmesan.

Aside from pizza, the menu features popular sandwiches and salads from the Morristown menu. Many items are family recipes that have been passed down for generations. Coniglio’s King of Pies is also planning a standalone lunch menu. During lunch, they will only serve sandwiches, no pizza. All bread will be made in house—hand-kneaded and hand-seeded—coming out of the oven every 15 minutes.
About Nino Coniglio
Nino was raised by a single mother in Bedminster. He worked in pizzerias since he was young, frequently riding his bike to pizzerias in Raritan. Since he was too young to work in the kitchen, he began experimenting with starter doughs at home. Eventually, the staff saw what he could do, and they put him to work. After high school, Nino moved to Brooklyn and continued mastering the art of pizza making. Learn more about Nino on The Best of New Jersey Podcast.
