The dining scene in Hoboken now has a new Mexican eatery. Fat Taco brings authentic tacos and tequila to town. This casual spot specializes in birria, but also boasts a tequila bar and specialty cocktails, as well as tacos. In addition, they aim to provide a thriving nightlife scene for guests.
The Hoboken Hospitality Group owns Fat Taco, in addition to several other local businesses; such as Birch, The Wild Moose Saloon, and the former Teak on the Hudson. Co-owner Gary Yip describes their latest venture as a “modern Mexican theme with Day of the Dead skulls, a fun tequila bar, and a lively singalong music atmosphere while you dine.”

The “Fat” in Fat Taco is actually an acronym, and stands for “Fun Art Technology”. The space can seat 80 indoors and gives off a rustic feel with exposed brick walls and painted-green chandeliers. Mexican artist Raisa Nosovan painted a mural inside the restaurant as well as a plant painting on the wall. Outdoor seating is also available on the sidewalk.
Birria & More on the Menu
At Fat Taco, their marquee menu item is birria. This traditional Mexican dish can be made in different ways, but here they use a brisket and short-rib blend. Executive Chef Jason Herrerra says they cook the meat for six hours; making it tender enough to fall apart and giving it enough time to absorb the Mexican spices and herbs. They serve their birria in quesadillas, over nachos, and inside tacos. In fact, they’re even working on a birria ramen, a perfect dish during cold weather. For vegetarians they offer jackfruit chicken tacos which, according to Jason, mimics pulled chicken.

The Hot Honey Brussels Sprouts are also a hit at Fat Taco. These charred sprouts are sprinkled with red chili flakes and a homemade hot honey drizzle. “They’re sweet and salty. They have a little kick. A lot of people are surprised by it,” Jason says. He also recommends the charred edamame, as well as the fan favorite multi-layer nachos. Click here to see the full menu.
As for dessert, their churro bites are a sweet treat; they are rolled in cinnamon and sugar, then served with Nutella and vanilla ice cream.
Brunch and Booze
Fat Taco doesn’t shy away from Brunch, either. They offer popular picks such as avocado toast, Churro French Toast, and a Mexican omelette. Meanwhile, their tequila bar prepares margaritas, specialty cocktails, and more, including a variety of flights. In particular, their margarita flight features a choice of two frozen flavors and two regular margaritas on the rocks. Gary says his favorite drink is the frozen margarita.
