Now open in New Brunswick, Fat Cactus Mexican Cantina is giving guests a unique restaurant experience. Director of Operations Mary Malek describes the décor as “contemporary chic”, but it’s the menu that really stands out. Meanwhile, the 5,000-square foot space seats 262 indoors at full capacity; whereas outdoor dining seats 76 beneath tents and tables with umbrellas.
Fat Cactus Mexican Cantina is owned by Sheel Patel of SHP investments. Patel owns multiple restaurants – including Latin fusion eateries and sports bars – and has 12 years of food and beverage experience.

What’s Different About Fat Cactus Mexican Cantina
“What sets our food apart is that it isn’t your typical Mexican restaurant,” Malek says. For instance, they do table-side, made-to-order guacamole from a cart. The cart is socially distant from each table, and the employee making the guacamole wears a mask and gloves.
They also have their own taco truck, which is a big hit so far. “The taco truck is the fun part because guests get to create their own tacos by checking as many items as they want off of a taco tear-pad menu,” Malek explains. After guests hand requests to their server, food is brought directly to them instead of walking up to the truck. Aside from the tacos, the rest of the food at Fat Cactus Mexican Cantina comes from the kitchen.
Drinks, Music, & More
The drink menu is already a talking point for patrons, with frozen margaritas and other cocktails to choose from. “The avocado-rita with its chili-lime salt rim has been a hit,” says Malek. This signature drink blends real avocados with honey and orange juice, and is one of a few unique cocktails.
You also hear live mariachi bands or singers at Fat Cactus Mexican Cantina during dinner service from Thursday through Saturday. In particular, they have live DJs on Fridays and Saturdays from 10:00 pm to 2:00 am.
