The “ambee” in Ambee Coffee Co. uses ambient light as the inspiration for its name, and many popular menu items. (For instance, drink options include Nova, Eclipse, and Aurora.) Steven Chiocchi, founder of the organic coffee and tea shop, says “Light is nature’s phenomena, so it felt fitting.”
New Jersey residents are already familiar with Ambee Coffee from its locations in Raritan and Somerville. But now, residents of Warren Township can also enjoy a selection of organic coffees, house-made alternative milks, and tea. In addition, the newest location in Warren is the biggest one to date.

A Commitment to 100% Organic
Ambee Coffee Co. sources only organic certified coffee and teas. Furthermore, these products are lab tested for mold and heavy metals before being served to customers. “I don’t know of any other concepts like it,” Steven says. This complete commitment to 100% organic coffees and teas is what separates the business from other shops.
Other standout products include their house-made alternative milks, plus vegan and gluten-free baked goods. “Anything you get on our menu has been made with care and thoughtfulness,” Steven explains. This extends to their vendor partners, as Ambee Coffee exclusively works with those who commit to sustainable, Earth-friendly practices.
One of their most popular drinks is their regular latte. “It’s so different than the kind you get at a chain,” Steven says. “We make alternative milks. You don’t get fillers or sweeteners. And it’s properly brewed to SCA standards.” Their Cortado is also popular, blending organic espresso with any choice of milk. Then there’s the Vietnamese coffee with sweetened coconut milk. But Steven’s favorite is the Americano.
Each Ambee Coffee location has a different food menu. But the Warren spot sells a full line of sandwiches and exotic toasts. Options range from the Ambee bacon, egg, and cheese sandwich to build-your-own avocado toast. The former uses free-range eggs and Nitrate free bacon. They also have a mobile app and a rewards program.
About the Business
Steven hails from Bridgewater and lives in Somerville. He started making his coffee at home about 15 years ago. He went on to sell his organic cold brew concentrate at festivals, events, and farmers markets. “The brand grew after a few years, so I decided to take it to the next level,” he says.
Future plans include expanding the menu, scouting additional locations, and furthering their partnerships with new, sustainable vendors. Steven is also opening a local roasting facility for wholesalers.
