It’s not easy living a gluten-free lifestyle for fans of either Mexican or Italian cuisine. So many popular items are typically off the menu, from tortilla chips and flour tortillas to pizza. But Agave Brunch Bistro in Flemington proudly serves gluten-free variations of these cultural cuisine staples, plus so much more.
The 1,450-square foot Agave Brunch Bistro is cozy and charming, with seating for up to 50 diners inside. In addition, they have an outdoor patio underneath a tent that can seat another 100 guests.

An Unexpected Combination
Prior to Agave the location previously housed an Italian eatery, which is why the menu includes Italian dishes. Chef and Owner Nestor Martinez also created a full Mexican menu to pair with it. He says the area lacks Mexican eateries, so customers gravitate towards those dishes.
Nestor has celiac disease, which is the catalyst for the diverse array of gluten-free options at Agave. “When you’re gluten free, what you eat doesn’t have to be boring,” he believes. Customers appreciate his commitment to creating flavorful dishes that separate Agave from other gluten-free options in the area. “These people don’t have many options so I try to make dishes they can enjoy,” Nestor adds.
All dishes are made from scratch with fresh, homemade ingredients. Popular Mexican dishes include tacos and burritos alongside Italian classics like pasta, pizza, and fried calamari. Nestor says the nachos are a popular appetizer. He tops crispy tortilla chips with refried beans, Monterey and cheddar cheese, pico, guacamole, sour cream, and jalapenos. Patrons can also add on meats or veggies. The Birria tacos are also a favorite, both of customers and Nestor, himself.
One signature dish at Agave that Nestor is particularly proud of is the Mulita. This authentic Mexican dish is an open taco with layers of lettuce, pico, roasted corn, and any choice of meat.
About the Business
Nestor is originally from El Salvador but lives in Flemington, so opening a restaurant in town didn’t take much convincing. “I fell in love with the town,” he says. “It’s quiet and not too crazy.” Prior to opening Agave, he owned Mexican restaurants in El Salvador. His formal training comes from the Institute of Culinary Education in New York City.
Future plans at Agave Brunch Bistro include creating a new menu that will include their most popular specials. “A lot of people have the specials and tell us we should have them on the menu,” Nestor explains. He also wants to open a takeout-only spot nearby.📷
