Skylands Castle

Today, in our ongoing series, "Beautiful Places in New Jersey", we feature Skylands Castle in Passaic County. This magnificent North Jersey estate is part of the 1,000 acre Ringwood State Park and home to the New Jersey Botanical Gardens. Skylands has the feel of the legendary home of a king out of a classic fairy tale with its stone walls, fountains and tree lined drive. The walls of Skylands were built from stones quarried on the estate. The stained glass medallions were imported from Germany and Switzerland. The paneling and marble were imported from England and Italy. The dark oak study features elaborate carvings of cupids, monsters and dragons taken from a German Renaissance wardrobe.

Hiking Point Mountain

On Tuesday of this week, we went back to hike Point Mountain. We wanted to do a real hike this time, not the cheating,-park by the road-half way up the mountian-easy hike that we did last time. It was a great hike through some beautiful woodlands and up over a large but easy to climb rock face. When we got to the top we were amazed to find thousands of ladybugs swarming all over the rocks. We'd never seem that many ladybugs in one place ever. We came to find out that people were experiencing the same thing all over the state. In the video above you can see the ladybugs flying back and forth across the screen and if you look real close you might even see them crawling all over the rocks. Point Mountain is one great hike if you haven't done it. From the scenic overlook you can see all the way to the Delaware Water Gap. The main attraction is the beautiful countryside with its farms, country roads, barns and old white churches.

I hate being predictable...but whats better than an apple-anything in early fall! I had to feature this recipe since it won me FIRST PLACE and a Blue Ribbon at the Hopewell Harvest Fair back in September, 2002 with a kind of funny story. Prior to buying the Inn, Ken & I lived in Hopewell Boro in an quaint old Victorian house for 10 years. The of town of Hopewell has a great sense of community and every year they have an old-fashioned Harvest Fair complete with hay bales, piles of pumpkins for carving, live music, games for kids, face painting, local crafters, farmers market, pet costume contest and a bake-off. (fyi: this year the Harvest Fair is October 3!)I had never entered any of my recipes in a contest before, but because it was a local thing and easy to drop my entry off in the morning before heading to work, I decided to do it. I had always loved to bake and as an aspiring Innkeeper, it made sense to try out my recipe on strangers rather than just for family and friends. Jersey Corn Fritters Recipe

Jersey Silver Queen Corn…YUM! Any NJ resident (or visitor) who’s never had Jersey Silver Queen Corn is truly missing one of the best treats of Summer! Silver Queen is a sweet, white corn which has fat kernels that resemble translucent pearls…and the corn is so tender that it can almost be eaten raw…but its oh, so much better cooked! The corn is fresh & plentiful and can be found at lots of NJ roadside stands from July through about mid-September. It grows well here due to our clay-like soil and does best when the ground is really moist…so needless to say, this is an extremely good year for Silver Queen in New Jersey due to the rainy spring & summer we’ve had. Sweet Corn begins appearing at roadside farm stands in New Jersey in late June so it’s a worthwhile stop to indulge in this spectacular Jersey treat! Corn on the cob is a great way to use fresh corn, but we can’t figure out a way to present corn on the cob to guests for breakfast without them thinking we’re really crazy! …So we make corn fritters for our guests instead, cause they’re sort of similar to a pancake! After guests have had these fritters, they always ask us where they can find the best corn to take home to recreate their ‘corn experience’! We LOVE the corn at Sweet Valley Farm in Ringoes and besides having great corn, they have the most wonderful peaches too! We have found their corn to be the sweetest and plumpest and they are located really close to the Inn…so that’s one of my weekly stops from July through September!
