The Mexi-Boys loves serving fried Mexican food. In particular, the food truck business serves ethnic fusion Mexican food and desserts with a focus on big flavors. In just a few short years, the team has grown to operate three food trucks across the Tri-State area.
“We wanted a cornerstone product that was unique and captured the Mexican flavors we grew up with,” says Eduardo Rojas. He owns the truck along with Alex Sanchez. The two hail from Edison, and both have backgrounds in food manufacturing and food trucks. The Mexi-Boys was founded in 2018, but built their first truck in late 2020. Now, the truck travels all through New Jersey, Pennsylvania, and New York, attending food truck festivals and providing catering.

Mexican Food with a Twist
While developing the idea for their food truck, Eduardo and Alex noticed empanadas were gaining popularity. They soon agreed to focus on Mexican food, but needed a way to make their menu stand out. That’s when they took the iconic burrito and transformed it into what they call a fried burrito (like a chimichanga). Patrons can fill their signature fried burrito with steak, chicken, or spicy chicken.
Other popular dishes include the Mexi-Bowl (salad and rice topped with seasoned chicken or beef), and Mexi-Boy Cone. The latter is a corn cone filled with beef, topped with guac, salsa verde, sour cream, and pico de gallo. “We put a spin on traditional Mexican food without losing the flavor,” Eduardo says. For instance, their Spicy Chicken Fried Burrito comes with Mexi-Boys Chipotle sauce, Mexican-style beans, rice, and three cheeses.

Vegan Options, New Items, & More
They can make nearly their entire menu vegetarian or vegan. For example, they have vegan fried burritos that use plant-based steak, chicken, and spicy chicken. There’s even a Vegan Mexi-Crab Cake that uses plant-based crab meat. Meanwhile, Gluten-free items include taquitos, tamales, and loaded nachos. For kids, they prepare quesadillas and soft tacos with various sides.
Future plans include growing the brand through their food trucks. They also want to expand the menu. “We’re always trying new things,” Eduardo says. “A Mexi-Zilla is a giant quesadilla stuffed with….Well you have to stop by to find out!”
