Those seeking gluten-free or low-carb options, as well as those with Celiac disease, have limited restaurant options. That’s why Bryan Morales decided to cater to these populations at his new spot, Carr High Cafe in Keansburg. In fact, his goal is to be 100 percent gluten-free by next summer.
At 1,800-square-feet Carr High Cafe seats about 30 guests inside, boasting blue and white accents and décor. “It has an old-school feel with high ceilings,” Bryan says. Bryan serves as executive chef and co-owns the spot along with Brian Santay. The cafe also sports unique tablecloths and non-traditional tableware. “We use butcher paper opposed to tablecloth. We give you colored pencils to draw and doodle with. We’ll take pictures and put them on social media,” Bryan explains. Meanwhile, the outdoor sidewalk seats 10 to 12 guests.

Going Gluten-Free
The menu is inspired by Bryan’s mother-in-law, who has celiac disease and requires a gluten-free diet. Prior to Carr High Cafe, he spent five years working at a NYC bistro that served paleo food. “There aren’t a lot of options down here for these kinds of foods,” he says.
Carr High Cafe has a separate fryer for its gluten-free fare, ensuring the food is safe. This includes menu items such as gluten-free fried chicken, mozzarella sticks, and French fries. In addition, they serve Smart buns courtesy of Smart Baking Company which are low carb and keto friendly. Even the pizzas and quesadillas use low-carb crust and tortillas. They also sell gluten-free toasted pastries that resemble Pop-Tarts.

As for other standouts on the menu, there are a few. From burgers and BLTs to loaded fries and a variety of mac and cheese options, there’s something for everyone; for instance, kids and adults alike love the grilled cheese sandwiches. They’re made with provolone, ricotta, and mozzarella stuffed with mozzarella sticks and house-made marinara on parmesan-crusted rye.
Don’t Forget Your Drink
Carr High Cafe offers a number of beverage options. They serve signature floats with flavors like root beer, orange dreamsicle, blueberry pie, apple pie, and pinã colada. Bryan also says his twin seven-year-old daughters are big fans of their milkshakes. Milkshakes come in 25 flavors, from classics like chocolate and vanilla to exotic flavors such as guava and passion fruit. Likewise, Bubble Tea is on the menu, and you can choose your own flavors.

Bryan has been in the restaurant business for more than 20 years; working everywhere from Papa John’s Pizza to Eagle Oaks Golf and Country Club. His training comes from the Food Service Training Academy. Both owners are also competitive chefs, frequently entering competitions for items like best burger.
