Bistro Pizzeria in Collingswood Serves Pizza, Pasta, and More

The town of Collingswood in Camden County has a new pizzeria that’s open and ready to serve. Bistro Pizzeria replaces Randazzo’s Pizzeria, with both new owners and a new menu. The owners are brothers with ties to not only the town, but the location of the pizzeria itself.

Alvaro Palillero and his brother Efren lived in Collingswood for a few years. At the time, Efren was out of school and working full time while his younger brother was in elementary school. “We used to get pizza at school on Fridays from this pizza shop,” Alvaro says. “I never imagined that Efren and I would one day own this pizza shop.”

When One Door Closes…

The decision to open Bistro Pizzeria comes from Efren’s prior success owning Mirabella Italian Restaurant in Voorhees. This spot, however, had to close due to the COVID-19 crisis. Not yet ready to quit the service industry, the brothers bought a pizza shop. They can seat about 25 people indoors, and will have outdoor seating starting next year as well.

Though this is Alvaro’s first time owning a restaurant, he has plenty of experience working at them. He says his father took him to work as a dishwasher for a few hours at the age of 11. He also worked at Efren’s restaurant in Voorhees as a server and in the kitchen.

Bistro Pizzeria offers more than just pizza. For example, one popular menu item is mussels marinara (red or white) with pasta. They also serve wings ranging in flavor from mild, hot, and honey bbq, to garlic butter, zesty ranch and garlic parm. Likewise, the Fettuccini alfredo is a hit. Click here to see the full menu.

Of course, their Pizza is the star of the show. First, Bistro Pizzeria uses top-notch tomato sauce and cheeses. “We want to give our customers quality rather than quantity,” says Alvaro. When it comes to signature pies, they already have a few hits. Popular pies so far include the “Kings” pie with pepperoni, sausage, mushrooms, and extra cheese; the cheesesteak hoagie, a white pie with mozzarella, lettuce, tomatoes, and onions, as well as American cheese; and the chicken florentine, a white pie with grilled chicken, spinach, provolone, romano, mozzarella, and ricotta).

Alvaro also says they plan to offer a special menu for outdoor dining; as well as a brunch menu in the near future.
