All’ Assassina Brings Killer Fresh Italian Pasta to Union

There’s a new Killer Pasta Project in Union from the popular business owner behind Souvlaqueria as well as Icecreamology. Dubbed All’ Assassina – which means “in the style of the killer lady” – the restaurant cooks fresh pasta a special way: Fast, methodically, and efficiently, just like a “professional”.

All’ Assassina can seat about 25 guests, but all patrons can watch as the team prepares every pasta dish. Their open concept design places the kitchen right at the order counter, along with all of the ingredients. Owner Marinos Stratigakis describes the interior as “modern, European, casual, and vibrant.”

Authentic, Fresh Italian Pasta

During a recent trip to Rome, Marinos and his wife Demetra realized something: They were eating pasta every day, yet they never felt bloated. Marinos soon discovered this was because of the Italian flour which makes fresh Italian pasta softer and smoother. It also has a slightly richer taste, mainly thanks to the use of free-range eggs. So when the idea for All’ Assassina came to Marinos he found a local, Italian chef. One that uses only imported Italian flour, the finest semolina, filtered water, and free-range eggs to make fresh pasta.

The menu at All’ Assassina is highly customizable. Patrons can build their own pasta dishes by selecting a fresh sauce, fresh pasta, proteins, and up to three toppings. Sauces include vodka and pesto, and they currently offer six types of pasta and two types of gluten-free pasta. The options include Creste Di Gallo, Pappardelle, Linguine, Spaghetti, Rigatoni, and Bucatini, plus gluten-free Spaghetti and Penne Rigati. Protein options range from pepperoni to bacon, with toppings such as capers or spinach. Every meal comes with a homemade baked bread stick and Parmesan cheese.

For guests who don’t want to build a bowl, All’ Assassina curates a selection of signature pasta dishes. The pancetta alla vodka is popular, made with their signature marinara sauce, smoked bacon, vodka, and cream with parmesan cheese. Another fan favorite is the Al Salmone, including lightly smoked salmon filet, capers, cherry tomatoes, peas, herbs, and white wine. But Marinos loves the Assassino and Figlia. This paccheri dish features charred pepperoni, olives, capers, chili flakes, and roasted garlic with honey in a spicy tomato sauce.

About the Owner

While Marinos operates All’ Assassina and his Greek restaurant Souvlaqueria, his wife runs Icecreamology. All three businesses are right next to each other in Union. Marinos has spent over 30 years in the hospitality industry, and has launched business concepts across three continents. He works extensively in Europe, the Middle East, and the United States.

Future plans for All’ Assassina include adding more types of fresh and dried pastas. They’ll also be featuring different pasta recipes on a weekly basis. These will use seasonal or specialty ingredients such as octopus, truffles, or asparagus.
